Simple Baking!

OK, so the below post really isn't about baking.  The recipe below just requires the oven to be on for about 5 or 6 minutes, and requires minimal work.  So what else have I baked recently?  Zucchini Bread!

My husband doesn't really enjoy it, but both Little B and I like to munch on it for a snack, or for part of our breakfast.  I actually stumbled upon zucchini bread about a year ago or so.  Before then I've never made it, at all, or would have even thought about making it.  Because seriously, how is zucchini good in a baked item??  It was just a strange and foreign idea to me, until one day (just like the situation with the tomatoes), I looked into my vegetable drawer and realized that my zucchinis were going to go bad, before I would get the chance to eat them all up.  So after a peek into my cookbook, I dared to bake some zucchini bread.  I'm glad I tried it!!

I'm not sure what the norm for zucchini bread is, though, since the few times I've made it, I've left out the walnuts from the recipe (due to my lazy self not wanting to go to the super-market to buy some).  My liberal and lazy self decided that if walnuts can be optional in banana bread, then they must be optional in zucchini bread.  And yep, I guess they are optional, because it tastes just lovely without the nuts!

Anyway, yesterday I made a nice fresh loaf of zucchini bread, and secretly thought to myself, how wonderful it is, to be able to sneak some vegetables into Little B's diet... even though it's laden with sugar and oil, and full of carbohydrates...  There still must be SOME good nutrients in there, right????  I suppose any little way of sneaking extra vegetables, nutrients, or fiber to the Little B is a good thing... although I suppose their is still some feelings of "guilty pleasure" involved...  :)
