Time for Baking

Now that the summer is slowly fading away, and the weather is cooling, I've begun my baking.

I have the unfortunate habit of buying a nice (big) batch of seasonal vegetables or fruit, and then sadly needing to throw them away because I've either (a) forgotten about them, or (b) just couldn't finish eating it all before they went bad.

Last night, I discovered I had 3 neglected tomatoes in my vegetable drawer, one of which was already beginning to mold.  I obviously threw that one away, but the other 2 were still good to eat.  Now, what do I do with them?  Lucky for me, I have a nice collection of cookbooks to help me decide.

I made Broiled Parmesan Tomatoes, and boy were they yummy!!  They are super super simple to make, and very very yummy.  And it was the first time I've ever made them (or heard of them).  Methinks I need to read my cookbooks more often!!  So what was involved in this brilliant recipe??

1.  Set oven to broil.
2.  Melt 1 tablespoon butter in a saucepan, and brown 1 clove of garlic (finely chopped).
3.  Cut the tomatoes in half, lengthwise.
5.  Dip the top side of the tomatoes into the butter/garlic mixture, and then dip into grated parmesan cheese.
6.  Place tomatoes on a foil-lined pan and broil until tender, and parmesan cheese has browned... approximately 6 minutes.

I've googled a few variations on the recipe, and you could easily use a mixture of breadcrumbs with parmesan cheese, or olive oil instead of butter, and one recipe actually had you spreading soft butter directly onto the tomatoes.  Mmmm, scrumptious!!

So yes, super simple, and yummy.  And I seriously can't believe I've never done this before!
